Farmers handpick the ripe cherries, then it is washed and sorted to remove all under or over-ripe cherries. From there, the coffee is then washed in clean water and placed onto wet parchment, allowing it to dry out. AA beans are between a screen size of 17 and 18, meaning beans are 7.2 to 7.8 millimeters in size.
